Recipe: Kickin' Grilled Shrimp


This recipe actually originated with Skinnytaste.com so you may have seen this on my Pinterest board for Skinny Meals. I have been eyeing it up for a while now and finally convinced Mike to buy some shrimp. He's not a huge seafood eater so I hardly ever get to have fish or shrimp and I was stoked when he said ok.

As usual, I changed the recipe around just a little to fit our palate, but this is soooo delicious you have to try it!!

Kickin' Grilled Shrimp

INGREDIENTS:
2 tbps. light mayo
2 tbsp. sweet Thai chili sauce
2 tbsp green onion, chopped fine
sriracha to taste
1 lb. large raw shrimp, deveined and shelled

DIRECTIONS:
Preheat your grill. Combine mayo, chili sauce, sriracha, and green onions. We did these on skewers, so if you're using wooden skewers soak in some water. You won't have to do this if you have metal ones. Lightly oil your grill and add shrimp. brush on some of the mayo mixture. Cook about 6 minutes or until light pink. Turn to other side and repeat. Pull shrimp off the grill and brush on more mixture. Serve and enjoy!!!

Recipe: Taco Salad

I know, I know...it's been almost a month since I've posted and I'm really sorry. Truth is, I haven't kept up with either blog that well lately. And, there's really no excuse except I'm lazy.

I was talking with someone recently about how it seems like I'm so busy, but I'm really not at all. So, I'm not sure why I can never find time to do anything. And, and I don't mean this in a mean way, my blog is last when it comes to priorities with my family. Even though it's just Mike and I, if I ever felt like he was upset about me blogging or really thought it took up too much time, I would stop.

But, I'm here today with my new food craving. Taco salads. Mike and I have tacos or burritos about once a week. Lately I have been craving some taco salads and thought of a cool way to do the actual tortilla bowl, so we went for it a few weeks ago. It was delicous!! And Mike was convinced he would never be full by it, and would have to have 2, but he was wrong!! They were so filling, and it's all great stuff to eat, so I figured I would post the recipe.

Taco Salad

INGREDIENTS:
1 lb. extra lean ground beef
1 pkg. low sodium taco seasoning
3-4 burrito sized flour tortillas
shredded cheese
salsa
lettuce
onions
corn
tomatoes
sour cream
and any other toppings of your choice

DIRECTIONS:
Preheat oven to 375º and spray two cereal bowls with nonstick spray. Brown ground beef and season according to package directions. Set aside. Chop up toppings and other ingredients.

Gently push tortillas down into the cereal bowls. You may have to fold some edges to make them fit. If you have a slightly bigger bowl that will work just as well. Place in oven for about 10 minutes or until the edges seem to be crispy. Take tortillas out of the bowl and place bottoms up on rack until bottom gets crispy.



Take bowls out and fill with ingredients.

Recipe: Egg Cupcakes

I have seen these around Pinterest for a while and decided to give them a try a few weeks ago. I'm so happy I did. They have now become part of my Meal Prep Sunday and you can switch it up every week to make it less redundant. 

And...the recipe is super easy!!

Egg Cupcakes (makes 12)

INGREDIENTS:
12-14 eggs (depends on how full you pour)
1/2 medium onion, diced
1 green pepper, diced
breakfast meat
1 cup shredded cheese of your choice
salt
pepper
garlic powder

DIRECTIONS:
Preheat oven to 425º and grease a 12-cup cupcake pan. If you wish, saute your peppers and onions and cook meat if necessary. Wisk together eggs and add seasonings of your choice. Pour eggs into cupcake pan filling about 3/4 of the way. Sprinkle some onions, peppers, and meat into each "cupcake". Then, add cheese. Baking will vary. When cupcakes seem firm, remove and sprinkle with salt and pepper if desired. Set on cooling rack to cool.

One day we were looking through the "motivation" pics I have posted on Pinterest. I was looking for the "perfect ass" so I brought up a bunch of the pics and asked Mike, "Ok, so which of these girls has the perfect ass?" and we started scrolling through. 

Eventually we came to this photo.


And this ma-fucker said..."No. That gap between her legs is too much.".....*crickets*

"WHAAAAA!! Are you kidding me??? I mean that gap is only what every woman in America strives for!!"

"Yeah. It's too much."

Strawberry Delight

My mother-in-law makes this for us a lot. She always has a dessert when we come over for dinner, but she knows we're trying to keep it healthy-er so this is our way of satisfying our sweet tooth while not necessarily compromising our "diet".

Last year at one of our staff Goodie Days I made this. It's so quick and easy all I had to do ahead of time was cut up the angel food cake and strawberries. Then when I got to school I assembled it and VOILA! Easy, healthy, sweet.

Strawberry Delight

INGREDIENTS:
2 quarts ripe strawberries, quartered
1 angel food cake, diced
1 tub light vanilla yogurt (I use Dannon Light and Fit)

DIRECTIONS:
Layer ingredients in a trifle dish or bowl as follows: angel food cake, strawberries, yogurt, repeat.

It's as easy as that. 

quick tip: I like to quarter my strawberries the night before and stir in just a tiny bit of Sweet and Low to marinate.

We Can Wednesday!!

It's We Can Wednesday!! I know I haven't posted much lately and I apologize. School is crazy lately and I'm not sure when it's going to die down. We had snow day number 11 last week........................let me let that sink in. We have 2 days scheduled to make up, but that means we still owe 5 more. (4 are built into our schedule) So as of right now it's looking like my last day will be June 23rd. WTF?!?!?

Anyway, good thing about snow days are that I get to go to the gym. So last week I actually went 3 days total, including Sunday. Sad to say one of those days SUCKED! I took sleeping pills the night before so I could sleep when Mike came home from work. And I did, but sometimes those sleeping pills don't get out of my system. So, I was draggin ass the entire workout.

Plus, Mike has started running on the eliptical again, which means I run with him. And don't get me wrong, it's only 25 minutes, but I HATE CARDIO! I don't know what's up with me but I have a breathing problem. Whenever I start running I lose my breath. Like within 2 minutes. And on this day, when I was feeling chest heavy anyway, LIFE SUCKED!!



Either way, I'm happy to go and I'm glad I got a workout in. I guess any workout is better than no workout.

My Health Hero!!

A while ago I was contacted by Judy from The American Recall Center. The American Recall Center is "a brand new site devoted to providing health and wellness news in simple, straightforward terms." This month their focus is a Who Keeps You Healthy campaign. They are highlighting Health Heroes from all over the blogosphere. And, of course I agreed!! I'd love to talk about who keeps me healthy. This month they are focusing on hip replacement awareness.

There are a TON of people who keep me in check. Most of whom read this blog and help me feel confident even in my failures. So "Thank You" to all of you!! Truthfully, there are too many people to name, so just know, your comments and faith gives me a ton of inspiration and I hope I can be the same inspiration to you throughout your fitness journey.

But, I'm going to be totally cliche' here, and focus on the one that means the most, my Goober. My husband, although totally hunky now, was not always this FITabulous. He struggled a lot with his weight when he was younger and was determined to get himself in check. When he was in high school, he joined an MMA school and got himself in the gym. Despite some skepticism from some friends, he worked his ass off and dropped the weight. He even became one of the most talented members of his MMA school. And most impressive of all, kept the weight off and kept up with his new discipline! Now he works out at least 5 days a week and is training to be in a weight lifting competition.


Mike is my Health Hero. While we may not always eat the way we should, and of course, drank the way we should, he has taught me the importance of staying healthy. He's patient and helpful, and when we work out together he pushes me and makes me work harder than I ever would alone. It's because of him that I have developed a love and connection with weight lifting, and I feel stronger and more fit than I ever have in my adult life. He's never rude or degrading, even on days when I give up or fall of the wagon. And he always there to pick me right back up and get me back on track.



Too bad he doesn't read this blog. haha. He might be impressed with himself!

Truth is I'm totally bummed about not working out. It was GORGEOUS yesterday and I was totally going to go for a run, but I have another excuse. It's Maryland State Testing week. Which means I'm exhausted!!! And it sucks because I would love to spend my entire day outside in this weather!! However, since we're running on a 2 hour delay schedule, that means I have to proctor the test for the first 2 hours of school, and then teach 7 classes after that. It's exhausting. But hopefully today is the last day and we will be back to normal by tomorrow. 

But, here is my promise to you. As soon as school is over...yes, school...I'm getting back in that gym. I miss it so much, but I drive about 80 miles a day and the gym is probably another 15 miles away so....I just don't have enough gas money. But when I work summer school, the gym is literally a half mile down the street so I'll be going there at least 5 days a week!!

And I am making another promise. I'm going to start running again. As long as the weather is decent I'm going to try to suck it up most nights and run. Even if it's only a mile a night. That's more than nothing!! And plus, Kelsey is doing this 30 miles in 30 days and I'm totally trying to link up for that 'ish.

A Whole Lotta Lazy....

About the blog...I don't know what in the hail is going on with this piece of 'ish. The other day only a select few could post comments, Wednesday with the giveaway the first 3 links wouldn't work. I'm so confused. I've posted on forums for blogger, I've googled for answers, I've tried to contact people...I'm at a loss. Everything is set to default for Blogger, I have it all the same as the other blog. I'm convinced it's possessed. So, I apologize for any inconvenience there has been with this bowl of crap, but....hopefully you'll stay with me. haha.

So, I'm over it. This flucking snow is getting on my last nerve. I know, I know...everyone is bitching about it and you're so over hearing about it. But I'm really over it...here's why....our electric bill last month was $360. So....electric heat is no longer existent in our house. Our heat stays off all day. The only time we turn it on is upstairs, about 30 minutes before we go to bed, then we turn it off and turn on our little ceramic heater for the rest of the night. It's literally 46º downstairs when I get up in the morning. We open the blinds and let the sun shine all afternoon which brings it up to about 60º, but as soon as that sun goes down it starts dropping.

I get home and change into a pair of leggings under my sweatpants. Then I put on a tank top, a long sleeved shirt, and a sweatshirt. Bring out the knee high socks and the boot slippers and add a scully and BOOM! That's my evening wear.


Sexy, huh?!? Can you blame Mike for wanting to constantly jump my bones? Ha! Yeah, right.

So, on days when I don't have work, when I wake up in the morning and come downstairs, where it's 46º, I get under my down blanket and turn on the tv. Where I stay.....until it's time to eat. I make breakfast then i go back under the blanket. Where I stay until lunch. Make lunch, then back under that comfy blanket. Until dinner....................you get it?

So, needless to say, I'm over this frickin weather because not only am I freezing, but I'm lazy, and fat. I'm too cold to pee when I have to go, let alone get out from under those warm blankies and work out!!

So God, please hear my plea. I'm ready for this body to get in check. So, please start warming up before I end up on that "My 600 Pound Life" show.

I got the tank in a medium. I do wish I had gotten a large and size was a major debate before I got it, but taking that chance is with anything you buy on the internet. It's really just my personal preference, too. I felt like this was a little tight in the belly and boobage area. I hate things that cling to my body especially when I'm going to the gym where there are a bunch of fit, skinny bitches running around. For normal people it probably would be perfect. You can judge based on the picture.

My friend decided to workout with me and she loved the tank. I'm thinking about buying one for her for her birthday. I even had a few compliments on the saying from some of the guys at the gym.

Fresh Homemade Salsa

First off, don't forget to stop by tomorrow because we have a giveaway!!!

I'm IN LOVE with this salsa. It is super easy to make and I always get a ton of compliments on it. If you like fresh chunky salsa you will love this! And it isn't hard to make at all, just a lot of chopping. And if you wanted it a little less chunky it would be even easier because all you would have to do is put the veggies in the blender and voila!


INGREDIENTS:
1/2 small red onion, diced
1/2 small white or yellow onion, diced
1garlic clove, chopped
1 lime, zest and juice
1 tsp olive oil
1/4 red pepper, diced
1/4 green pepper, diced
1/4 orange pepper, diced
1 jalapeno, diced
4 roma tomatoes, diced
1/2 cup cilantro, chopped
1 cup frozen corn
1 can black beans, drained
salt to taste

DIRECTIONS:
Dice the onion and garlic. Put it in a bowl with the oil and juice and zest of the lime. Let sit while you chop the rest of the ingredients and mix together. Serve immediately or refrigerate overnight.

If you choose to use the blender, rough chop all the veggies (minus the corn) and throw them in the blender with the juice and zest of the lime, the oil, salt, and the cilantro. Then blend until the consistency you desire. Add corn and black beans.

Ugh, I love this stuff!! We add it to everything!! My most favorite is mixing it in an omelet. But I also love just eating it on it's own with some chips!! YUM!!

Skinny Copycat Chick-Fil-A Nuggets

I am in love with Chick-Fil-A. The closest one, however, is up the highway for 15 minutes so we tend to stick to the one delivery place in our town. haha. So, when i found this recipe for copycat Chick-Fil-A nuggets I knew I had to try it. Not to mention it was a SKINNY RECIPE!!

The only problem was it called for pickle juice and I had just thrown away my last jar. However, finishing off a jar of pickles is never a problem for me so the next time we headed to the store I was sure to pick up a jar! (Always save the juice!! If you don't want the copycat chicken nuggets, pickle juice is always good for pickle shots!! pickle shots = pickle juice + vodka)

While I was preparing the nuggets, super easy by the way, Mike looked up the recipe for copycat Chick-Fil-A sauce and we tried that out, too!! Yes, I had mac-and-cheese. I have been craving it, but I didn't feel guilty at all. Especially because one serving of these nuggets (4) is only 149 calories!! For full nutritional info see the original recipe at Skinny Mom.


INGREDIENTS:
1 lb. boneless chicken breasts
1/2 cup pickle juice
1 egg
1 egg white
1/2 cup milk
1 cup flour
2 tbsp powdered sugar
1 tsp paprika
1 tsp salt
1/2 teaspoon black pepper
1/2 tsp garlic powder
1/2 tsp celery salt
1/2 tsp dried basil
coconut oil (really any oil)

DIRECTIONS:
Cut chicken breast into large nugget size pieces and marinate in the pickle juice for 30-60 minutes. The chicken will shrink just a little when cooking.

Put oil in skillet and heat. The temp should be about 350º. While that is heating up, mix wet ingredients together in a bowl. Then, mix dry ingredients into a separate bowl. 

Place chicken into the wet ingredients. Dip each piece into the dry ingredients and place in the skillet. Cook on each side about 3 minutes or until golden brown and crispy. 

Remove chicken from oil and let dry on a paper towel covered plate. Serve and enjoy!!

Ahhh...push it!!

It's We Can Wednesday chicks!!

So I made it to the gym 3 times in the last 4 days!! So proud of myself! I did those body squats for about 75!! Whoop! I did not however do it straight. I took a few second breaks in between. Actually, I was doing legs and biceps, I know weird...but I'm really trying to work on my arms. More about that in a little. Anyway...so in between sets of curls I threw in about 15 or 20 as my break!! I'm the shit! Except for the fact that I can't move today. And I would really only be the shit when I can do 500 like the shady dude from last post. But that's beside the point.......haha.

About the arms..So I could honestly care less about perking up my legs. Plus, if I keep hitting up these body squats that will NOT be a problem....but I'm tryin to get this Flex Friday ish under control!! I have been strong my whole life. When I was a cheerleader in high school I weighed 100lbs but was always a  base. But....I've never had biceps and I want those beetches!! So, we're working on it. I always throw a little curl or something in every time I'm there.

Now I'm kinda pissed, though, because I had a set of 5 pounders in the cart last weekend when I went shopping and I thought to myself....what the hail is 5lb dumbbells gonna do for me?? Well, certainly more than 0lb dumbbells, which is what I have at the moment. So..until then I guess I'll be using that gallon water jug filled up. lol. Hey at least I can stay hydrated while I'm pumping iron....eerr water...

I guess I can make a tip for this week! Although I do... don't let lack of equipment stop you!! Be resourceful! Save those gallon jugs of milk or vodka fill em up with water and PUMP!!

We Can Wednesday!

So I'm not even going to mention my goals this week...one word...fail!! Life goes on!! Hey I went to the gym!! once....

Anywhooooooooo...while I was at the gym that one day I "came up with" a great leg workout!! And you can do it in our pj's!!! Which we all know is my goal in life. :)

You see, when I work out with Mike I die. And by the time we were going into our 5th chest exercise I was done. D.O.N.E. done. I always push myself hardest with him, which is good...but I should probably learn to pace myself. So, when he went on to exercise number 6 I had had enough so I decided to work it leg style instead!!

I have seen some people do these before and I couldn't even tell you where, but I thought I would give it a try. What can a little extra leg workout hurt??

I think they are technically called body weight squats, but all you have to do is drop it low as fast and as many times as you can in a row!! I found this video but it's a little shady...I'll explain after you watch.


First off, this mofo is at a playground in shorty shorts and no shirt getting down on some squats.......................................*crickets*.............................shaaaaady! And the whole flash to him laying in the bed............I can't.

Soooo...I did 30 of these in a row and numero uno I couldn't breathe after. Then....I totally cramped up every time I took a step. haha. Worked the eff out biotches!!! Well, apparently not as worked out as Creeper Steve there, but, I would have done more if Mike wasn't done his workout at that point. I think a few short breaks in between help, too.

oh CRAP...medical advice needed...

So let me first warn you...this is going to be a post about poop. So...if you don't like talking about poop or listening to someone else talk about poop, you might want to just that little button that exits you out of this page. K?? k.



I have a poop problem. And a horrible doctor who thinks it's all in my head. Butttttttt...no pun intended...I think it's really hindering my progress with losing those inches. And therefore, I'm making my poop problem your business. Oh Shiiiiit...literally

I don't poop. I mean, of course I poop, but it literally only happens about 3 times a week if that. Whenever I tell people that they say, "Oh that would suck to feel constipated that often." Nope. Doesn't suck, because I almost never feel constipated!! I just don't have the urge to poop.

So where the hell does it all go? It has to be stuck in there somewhere. And therefore, I have come to the conclusion that my poop issue is why I can't loose that pudge in my belly! It's a pudge of poop!!

It all started in college. First off, I know it's weird, but I DO NOT poop in public. I don't care how much pain I'm in, I'm not going into that public restroom where someone could totally sit beside me while I'm pooping. So, the community bathrooms in college totally effed me. I would hold that shit for a month at a time waiting until it was a holiday break, or my parents came to visit, or we went to someone's house for a weekend, but I wasn't doing it in the dorm. It literally caused me to have panic attacks in the middle of the night. I had to go so bad but just held it. Until the moment came where I was sitting on a toilet at 3am sweating with blurred vision and having convulsions because the panic attack was setting in.



Luckily my junior and senior year I had an apartment so I had my own bathroom. I became a little more regular but definitely nothing like I should be. And it's stuck until now.

And believe me, I'm sooo not one of those wives that doesn't fart or poop in front of Mike. I wouldn't be surprised if one day he came in and sat on the shower ledge just to talk to me while I was pooping. And he's totally the guy that's like, "Whoa!! Come check this out!!". lol. And it never fails. Although we have 3 bathrooms in the house he always wants to poop in the one I'm showering in so he can "keep my company". So, it's not like I'm trying to hide it from him now. I just think it's what my body got used to and it never changed.



So I need help! Could that be a reason I'm not losing inches like I want to? Or am I just lazy and coming up with excuses?

Do you have any suggestions?!?! I'm still not going to poop in public even if I do get the urge, so that's out of the question, but maybe there is something that you take that makes you more regular?

Quick Breakfast on the Go!!!

So I'm not sure if I've mentioned it before but I'm a Bzzagent. Pretty much I take some surveys and sign up for campaigns where I receive free items in exchange for an honest review of the item. This campaign was for Fiber One Meal Bars and I'm so super excited to tell you about it. First off, they sent me 2 boxes of the meal bars right off the bat. Sometimes they send you a coupon for a free one and you have to go to the store to get it which is always a problem for me because my Food Lion doesn't always have the products I'm reviewing. But in this case they sent the boxes right to me!! They come in 3 flavors but I only got two of them; Strawberry Greek Yogurt and Chocolate Peanut Butter. The third flavor is Dark Chocolate Almond and I think that sounds delish, too!!


The Strawberry Greek Yogurt is by far my fav. It's so good and although it's just a small bar it does satisfy you as a breakfast bar. I tend to get hungry every 2 hours anyway, but I was not starving for food like I had anticipated. Each bar contains 10g protein and 9g of fiber so great for a breakfast option. I'm not sure about whether or not I consider it a "meal bar" like they say, but it's a good option if you're running late out the door.

And it tastes so good!! Some people have complained that they are a bit dry, which I guess I can see, but then again it is a bar that contains nuts. And nuts are dry. So... But the greek yogurt helps to keep it a little more cohesive.

I've been hiding...

OK, so here's the truth. I've been sucking at this whole fitness thing. I was doing great when I started T25 and this blog and I really should get back on it. But........I'm just not motivated. AT. ALL. And truly I'm so depressed with this damn snow that all I want to do is feel comfortable which means I'm eating bad and sitting on the couch a lot. And it doesn't help when work does this to me....even though I didn't have one.


And....from what we've heard, February is supposed to have the worst snow yet!! Worse than what we have already had. And Mike just got a notification from work that it could start tonight. And I might cry myself into oblivion if that's true. And, and, and....

I honestly think if I could do some workouts at home...and not hot sweaty workouts like T25...I would be able to make up for some of the stuff I do at the gym. Like get a few sets of dumbbells and work it. My main problem with T25 is that I have to change into a tank top and shorts and it's too damn cold for that. But if I could just wear my pjs to work out I'd be better.

Honestly, if we weren't so broke right now I would be on point!! The only reason I don't go to the gym every night is because it costs so much in gas money. Now that we're 20 minutes away from the gym it's not as easy as it was before.

I might check out the YMCA across the street from my school. The only thing is that I pay for our gym, too so by the time I pay for the YMCA I might as well just pay the gas for my gym. lol. #beastmodeproblems

I guess one good thing I have been doing is planning out meals. Well, dinners at least. Lunches I already prep for. But then again, that's more money. And I organized my Pinterest boards so it's easier to look for stuff.


Hopefully I'll be able to get back in the grind sooner rather than later. Doesn't look like I'll be a swimsuit model this summer. Maybe next year...

We can Wednesday!!

So, this week I'm not doing well at motivation, again........aaaaaaggggggain........but that's ok. I'm sorry. It's honestly just too damn cold. Maybe I can figure out how to get in the swing of things again when it's warm and then maybe next summer will be my summer to be skinny. haha. Pray for no broken bones!! If it wasn't for that stupid foot I'd still be on track. I just need a routine and not one that demands be to work out every single day of the week. And how can you resist doing things like this...


But one thing I am good at is meal prep. Well, at least for lunch and sometimes breakfast. lol. And the way I do it it doesn't take me long at all!! So....I figured I would share some things with you guys and hopefully it can help you, too!!

Breakfast, is so simple. Hard boil some eggs grab 2 every morning and enjoy. I also love me some breakfast wraps. Scramble some eggs, throw in a tiny bit of shredded cheese, some sauteed onions and peppers, turkey sausage if you have it, wrap it up. Wrap it in saran wrap or foil. Freeze. Grab one whenever you need it and throw it in the microwave on like 70% for a few minutes and turn halfway. Here is a recipe I wrote a while ago on Hopelessly Ever After.


OK, now lunch...now, to each their own, but I love seafood. So most of my lunches consist of fish or shrimp, but chicken is also definitely the way to go!! I usually get the big frozen bag of tilapia and the cooking is the EASIEST!! OK, thaw your fish, then sprinkle each side with some salt, pepper, chili powder, garlic powder, etc. Then, broil top side down for about 5ish minutes depending on the size. When they start to turn white, you're good. Then turn it over and brush a tiny bit of light mayo...and I mean a tiny bit over the top and broil for a few more minutes. Done. Cook up some rice and broccoli and you're done!!

For the shrimp, I also buy mine frozen. I prefer the uncooked kind because I like to sauté mine in garlic and a little bit of olive oil, but it's up to you. The uncooked kind is a little more time consuming because you have to shell them. But honestly, so easy. Sprinkle a tiny bit of olive oil in a saute pan, then add some minced garlic. Drop in those thawed shrimp, sprinkle some salt and pepper and move em around a little until they turn pink. Don't overcook because remember you have to reheat when lunchtime comes. Then again, cook up some rice and broccoli and you're done!! 

OK and lunch numero tres!! Mike and I make an awesome, easy as 'ish crockpot chicken. It's not as healthy as grilled chicken, but it's soooo good. AND....you can use FROZEN chicken!! That's right!!! OK, so, put a few frozen chicken breasts in a crockpot, about 2 cups reduced sodium chicken broth, half a packet of taco seasoning, half a packet of ranch seasoning (you can do a whole packet we just try to keep it healthier). Cook on low at least 6 hours. We like to drain some of the broth out just to dry it up a little for tacos but if you're putting it on rice you might want it a little moist. moist. moist. Add some hot sauce or fresh salsa and voila!!

Accountability

Oh my Gooooooodness!! (Sheneneh style) I'm so excited to have all these new followers!!! Today is the last day to enter the giveaway so go head over there and be sure you did everything!!

Today is Friday!!!! Which means I have to tell you how well I followed through this week!! And ladies I'm excited!!! Well....about one thing at least. haha.

Here were my goals from Sunday:
 (remember I'm doing it Saturday to Friday now so I really started Saturday)

1. Work out at least 4 days including one day of cardio. (I know one day isn't a lot but I hate HATE cardio so start slow) I already got one good workout in yesterday and I know I will be getting in another tomorrow. That covers 2 days already which only leaves me two more. Totally doable. 
2. Get in 4 solid days of good water intake drinking at least a half gallon a day. I did this already once before so I know I can do it again. I find it so much harder to drink that water at home. There are so many more tastier options. I'm only at school 4 days this week so once again I'm setting a goal I know I can attain. Maybe I'll try for some days at home next week.
3. Eat a pre-planned or at least healthy meal for at least 2 meals per day. I've already planned out the dinners, but I know something will happen to where I don't actually make dinner. It always does. We've got 3 solid days already planned worth of healthy dinners. I hope I can get to them!!
4. Eat healthy snacks, and don't overeat them. I love "pops" (mini rice cakes cheddar cheese flavor). But the problem is I could literally eat the entire bag in one sitting. So....I need to pre package them I think. The problem that every time Mike has a day off we use the night to go in the theater and watch movies or catch up on tv shows. And....we take snacks up there with us. Usually gummy bears and pops. I think if I have a baggie full rather than the entire bag, it could definitely be a little healthier. I also want to get some pineapple, bananas, cucumbers, carrots, etc. and make a healthy greek yogurt ranch dip instead of ranch dressing. I love veggies and ranch dip so it would be a healthier option.

And here is how I did!!!
#1. I will just have you know that I did not workout 4 days this week. I worked out 6 baby!!! That's right. 6 damn days!! In the snow!! And one of those days I was hungover and tired, but I did it!! Now, unfortunately one of those days was not cardio. haha. Told you I h.a.t.e. cardio. But I mean I worked out 2 extra days!! Chum on Cletus! (update: clearly I wrote this the night before and had full intentions of going to the gym today, but I didn't make it. So 5 days. But still better than 4!!




#2. BIG FAT FAIL!! I actually didn't get in even one good day of water intake. We had off school literally all week because of the snow. I never drink as much as I should when I'm at home let alone that it be water. There are too many other options!! Maybe next week.

#3. FAIL! Once again, being home all week sucks for my diet. I literally planned the entire set of meals this week. I always have a healthy lunch. I usually make tilapia and rice or shrimp and rice. But, being home, and especially in the snow, makes me want everything unhealthy. And Wednesday I had an all time low. I told Mike I wanted to hit up happy hour. We usually just get wings which is bad enough, but this week we ordered loaded fries, wings, and then ate half of our friends deep fried jalapeno check dip. Ugh. makes me sick just thinking about it. (not really, it makes me hungry...)

#4. I actually think I did pretty well with this. I didn't prepackage my "pops" but I did only buy the small bag and I didn't finish the whole thing. I'm so in love with them, though. But, I also went and bought a pineapple and some cucumbers to snack on, too!! So, I wouldn't call this a fail, but I wouldn't necessarily say I did what I had intended to.


OK, so my goals for this week are:

#1. Continue to try to get at least 4 days of working out in. Since I won't be home as much this week it might be a true test of whether or not this goal is attainable for normal weeks. And, again, one day of cardio. I'm going to do this this week. I promise. I hope......

#2. 5 days of good water intake. Half gallon or more. I really think I can do this this time.

#3. 3 nights of healthy meals. I have a Pinterest board called "Gettin Right" where I have a ton of recipes and workouts and all that. Tomorrow, I'll sit down with Mike and we can choose three of them. Then, he can choose whatever else he might want this week. I like him to think he has a say in it. It helps him be a little more agreeable. lol. I'm going to do the premade lunches so that's easy, and hard boiled eggs for breakfast. Hopefully I can fit in a few snacks at work, too.
